Couscous is North Africa’s national dish. It is most often cooked in a mild or spicy broth and served with vegetables and sometimes meat. That’s boring. I came up with this tasty ressipee a few months back for a health conscious group and it was received quite well. Just today, quite by accident, I was reading an article about couscous and to my stupefaction there is a dish very similar to mine that’s served in Algeria and Morocco as a delicacy at the END of the meal, as a DESSERT! Here’s my version of “seffa”.
