Wrap It Up……I’ll Take It!

Somebody showed up at the last minute and wanted a “sandwich” with no meat…….Oh and of course they were in a hurry…..So I  made this little number…..Grilled Tomato Tortilla filled with Poppy seed Spinach Salad, Grilled Zucchini, Matchstick Carrots, Pickled Red Onions, Roasted Red Pepper, Sliced Tomato, and Avocado, along with a side of Sweet Chile Minted Rice Stick Salad.

These were some of the best tacos I have ever had. We ate at a small seaside restaurant in Cancun, Mexico where meat is sliced thin and marinated, then layered on a vertical rotisserie and slow roasted. When it’s time to make the tacos a lady on the other side of the kitchen presses off fresh corn tortillas and grills them. Then the taquero slices off the meat of your choice and fills the tortilla and sends it to your table with a myriad of salsas and toppings. Can’t be beat…

Achiote Pork Flatbread with Steveo’s Funked Up Catch-Up, Sweet Hot Habanero Pickles, Habanero Chedddar and Mozzerella Cheeses, on Al Habashi’s Turkish Bread…….someone drizzled yellow mustard on theirs for a Cuban twist……none the less it was enough ta make ya go mmmmm……
